
Lithuania Post introduced a special stamp from a philatelic series under the name “Gastronomic Heritage”. The stamp features a cold pink soup that is a traditional cold soup from beets . Fresh beets are cut and boiled. After cooling the beetroot soup is added milk, kefir, cucumbers, hard-boiled egg, seasoned with dill, onion leaves and parsley. The soup is eaten with boiled potatoes. Refreshing, savoury and bright pink, cold beetroot soup, or 'saltibarsciai' has been a favourite dish in Lithuanian kitchens for hundreds of years. This garishly pink soup is incredible popular, particularly in summer when the weather can be quite hot. Actually, most of the Lithuanians have their own favourite way of eating šaltibarščiai. Some likes it with eggs, some put boiled potatoes and some even add a little bit of sour cream to it so it would be of more rich taste.
